We decided to replace the traditional ingredient that is used in Christmas truffles - sweetened condensed milk with mashed banana. This makes for a healthier alternative to the high sugar and very sweet traditional truffles. It also allows these truffles to be dairy free - therefore appealing to those with allergies. The mashed banana gives these truffles their moist texture and a natural sweetness. We also decided to use our Salted Cashew Butter in our truffles to create the fudgy texture. Cashew Butter is a rather neutral taste - therefore is does not overpower the chocolate notes of the truffle. Instead it adds to this chocolate flavour by creating a nutty and creamy sensation.

(Makes 6 truffles)
- 1/2 Banana
- 1 tbs 99th Monkey Salted Cashew Butter
- 1 heaped tbs cacao powder
- 4 tbs oats
- Desiccated coconut to roll
- Mash the banana with a fork
- Add the Cashew Butter and mix until combined
- Add the cacao powder and oats and mix until your batter is formed
- Roll into 6 balls and then roll each ball in the desiccated coconut
- Allow to firm up in the fridge
