Ingredients:

  • 2 large bananas mashed
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1/4 cup yoghurt
  • 1/3 cup sugar
  • 1 tbs 99th Monkey Almond Butter 
  • 1 tsp vanilla essence
  • 1 3/4 cup plain flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • pinch of salt and cinnamon
  • Middle layer: 1/4 cup 99th Monkey Almond Butter
  • Topping: handful of flaked almonds, icing sugar dusting 

Method:

  1. Preheat oven to 180 degrees C and line a loaf tray with baking paper.
  2. To a small bowl, add eggs and whisk. Add the banana, oil, yoghurt, sugar, 1 tbs almond butter and vanilla and stir well.
  3. In a large bowl, add the flour, baking powder, baking soda, salt and cinnamon. Stir well to combine.
  4. Pour the wet mixture into the dry mixture and gently stir in until just combined.
  5. Pour half the mixture into the tin. Dollop 1/4 cup almond butter over the batter and swirl around. Pour over the remaining banana bread mixture.
  6. Sprinkle the flaked almonds on the top. 
  7. Bake in the oven for 40-45 minutes or until a skewer comes out clean.
  8. Let cool on a wire rack before slicing up to serve!
