The peanut butter cookies you didn’t know you needed.

What would you do if we told you, you could have your cookies and eat them too. That’s how it goes, right? 

With the festive season just around the corner we’re all looking for delicious recipes to make to impress, and share with our loved ones. What’s on the menu is super important and one of the main events of the day! At 99th monkey we have already started planning, on the list is satay tofu, roasted vegetables, delicious salads, peanut butter cups, peanut butter cookies… You get our theme, peanut butter recipes are the vibe this year (as every other with us). With so many factors to consider and details to prepare: Who’s sitting next to who, secret santa, presents, decorations, entrees, drinks, mains, desserts and pair that with dietary requirements and preferences it can get overwhelming and little things can get overlooked. No one is going to notice if the napkins don’t match, or if there's one less salad on the table. The one thing everyone is sure to miss is dessert.

We got just the thing for you. Introducing our (not so secret now) 99th monkey chewy, gooey, crunch peanut butter cookies. A classic go to for any household or party. Vegan. Gluten Free. Refined Sugar Free… Even with added protein, if your heart so desires. So we won’t keep you waiting any longer. Let’s get to it.

 

The best peanut butter cookies.

Ingredients

¾ cup of 99th monkey unsalted natural peanut butter

¼ cup vegan butter 

¾ cup spelt flour (or flour of choice) 

¼ cup bodyscience clean vegan protein vanilla (optional) 

Or alternatively, substitute the protein powder for a ¼ extra flour

1 cup coconut sugar

Pinch of salt

1 tsp baking powder

1 tsp vanilla extract 

Splash of almond milk 

Method

- Add the peanut butter, vegan butter and coconut sugar to a bowl and mix till creamy.

- Add in flour, clean vegan protein powder (if using), baking soda and salt

- Gently fold the dough until combined 

- Get a tablespoon and roll into balls and place evenly onto baking tray.

- Flatten slightly and bake for 12 - 15  minutes at 180C. Enjoy!

Makes 6 - 8 large cookies or 10 - 12 smaller cookies.

Smooth or crunchy peanut butter?

The great debate. Personally, we believe these cookies are best with a smooth, creamy peanut butter. Our unsalted, natural peanut butter is a thick, creamy delicious consistency that gives these cookies the ultimate texture. Soft and gooey on the inside, while having a little bit of bite and crunch.

Could you use another nut butter?

We love a good twist on a classic. While we haven’t tried any variations using our amazing nut butter range (yet) we have absolutely no doubt that any of our spreads would work a treat in this recipe. Our natural almond butter spread would add the perfect amount of flavour and a unique creamy consistency to the batter, finished with sliced almonds on top! How about hazelnut cacao cookies, anyone? Oh the possibilities are endless...

Do I have to use protein powder? 

No! Your cookies, your recipes. When we’re feeling like a little something extra, with a boost of protein and flavour (balance, are we right?) We loved added a little bit of plant based protein into the mix. We have used the body science clean vegan protein, a dual blend of rice and pea protein with added digestive enzymes and goodies for some extra #health. The perfect texture and flavour to add to your cooking and baking adventures, a foodie’s dream. Give it a go, we promise you won’t even notice the difference and we’re betting you may even like this version better!

What can you add in as extras to the cookies? 

Whatever your heart desires! We have tried adding some crushed peanuts into the mix for a little crunch ontop. Adding some chopped dark vegan chocolate will give you the ultimate chocolate peanut butter combination. While adding some dried fruit such as dates, cranberries or sultanas with some nuts and seeds will make the perfect trail mix cookies. We are not opposed to stuffed 99th monkey nut butter cookies as well! 

However, after a few batches we have honestly found these cookies are perfect just the way they are. So good, you’ll lick the spoon and bowl clean.

How long do these peanut butter cookies last? 

If you’re anything like us, not long at all! However, if you’ve made an extra batch to save, these can keep in an airtight container at room temperature for a few days. Or, alternatively they can be stored in the freezer for 1 - 2 months.

All the ingredients are super simple and convenient, we pick them up from our local Coles while we’re stocking up on our nut butter range, of course ;) to have on hand when we’re feeling like a a little homemade treat!
