Seedy Snack Bar

  • 1/2 cup 99th Monkey ABC Butter
  • 1/2 cup Medjool dates
  • 1 Tbsp rice malt syrup
  • 1/2 cup puffed rice
  • 1 1/2 cups rolled oats
  • 1/2 cup almond meal
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1/2 cup dried goji berries or cranberries
  • 1 tsp ground cinnamon


  1. Prepare 20 x 20cm cake tin, spray with oil and line with baking paper or cling wrap so that you are able to easily remove bars once set.
  2. Place dates, rice malt syrup and the ABC Butter in a high powered food processor and blend until a smooth paste forms.
  3. Combine puffed rice, oats, almond meal, pumpkin and sunflower seeds, dried berries and cinnamon in a bowl. Add date mixture and using your hands combine mixture until thoroughly combined.
  4. Press mixture firmly into prepared baking tin, place in fridge for 2 – 4 hours, or overnight, to set. Remove from fridge, cut into slices and eat!
