Ingredients:

  • 50g banana (about 1/2 banana)
  • 35g rolled oats (about 1/3 cup)
  • 20g vanilla protein powder
  • 1/2 tsp baking powder
  • 10g 99th Monkey almond butter
  • 100-120ml unsweetened almond milk
  • 10g 99th Monkey almond butter
  • Flaked almonds & icing sugar

Equipment:

  • Small oven safe dish/container
  • High-speed blender
  • Fork

Instructions:

  1. Preheat the oven to 180C and lightly grease your dish.
  2. Mash the banana in a bowl.
  3. Blend the oats in a high-speed blender until fine then add to the bowl with the banana. Add in the protein, baking powder, 10g of almond butter and almond milk.
  4. Mix until well combined.
  5. Pour 3/4 of the mixture into your dish then dollop the remaining almond butter in the middle.
  6. Pour over the remaining mixture.
  7. Top with the flaked almonds and bake in the oven for 20-25 minutes.
  8. Remove from the oven and sprinkle over some icing sugar. ENJOY!

Tips:

  • For a sweeter taste, add a drizzle of maple syrup or honey.
  • For a more indulgent experience, add a scoop of vanilla ice cream to your baked oats.
