Ingredients:

Almond Cake Base:

  • 1 1/2 cups almond meal
  • 2/3 cup desiccated coconut
  • 1 tsp baking powder
  • 2 eggs
  • 1/2 cup maple syrup
  • 1 tsp vanilla extract

Almond Paste:

  • 1/2 cup 99th Monkey Almond Butter
  • 1/2 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1 tbsp almond milk (or milk of choice)

Semolina Custard:

  • 500 ml milk
  • Splash of vanilla extract
  • 1/4 cup Natvia baking sweetener
  • 1/4 cup fine semolina
  • Knob of butter

Instructions:

  1. Preheat oven. Prepare a square/rectangle baking tin lined with baking paper overhanging a little bit.
  2. Almond Cake Base: Whisk together wet ingredients. Mix together the dry ingredients separately and then add the wet into dry & mix until well combined. Spoon this mixture into the prepared tin and smooth it out evenly covering the whole bottom of the tin well.
  3. Almond Paste: Mix all ingredients well and spoon over the base you have already put into the tin. Spread the paste evenly all over the top. It's okay if it mixes with the base.
  4. Semolina Custard: Place a pot with about 500 ml of milk, a splash of vanilla extract, and 1/4 cup Natvia baking sweetener over heat and bring to a simmer until it's hot with bubbles around the edges. Slowly add in a steady stream 1/4 cup of fine semolina, whisking the whole time until it becomes smooth, luscious, and thick. Take off heat and whisk in a knob of butter. Leave to cool until it's warm. Then pour it evenly on top of the prepared layers in the tin.
  5. Sprinkle with cinnamon, almond flakes, and bake for 20-25 minutes or until golden brown and the custard looks set.
  6. Leave to cool, slice, and enjoy!
