Almond Frangipane Tart Recipe

Yields: 8 servings Prep time: 1 hour Cook time: 45-50 minutes

Ingredients:

For the Tart:

  • 1 ¼ cup all-purpose flour
  • ½ cup icing sugar
  • Pinch of salt
  • 120g unsalted butter, cold and cubed
  • 1 egg, whisked
  • ½ tsp vanilla essence

For the Filling:

  • 90g unsalted butter, melted and cooled
  • 1 cup sugar
  • 3 eggs
  • ¼ cup 99th Monkey Smooth Almond Butter
  • 1 tsp vanilla essence
  • ¼ tsp almond extract
  • Pinch of salt
  • 1 ½ cups almond flour
  • ½ cup flaked almonds
  • Icing sugar, for dusting

Instructions:

Making the Tart:

  1. Prepare the dough: In a bowl, combine flour, icing sugar, and salt. Cut butter into small cubes and rub into flour mixture until it resembles breadcrumbs. Add egg and vanilla, mixing until dough comes together. Wrap in plastic wrap and refrigerate for 1 hour.
  2. Roll and shape: Roll out dough on a lightly floured surface to a 3mm thickness. Line a 23cm tart tin with the dough, trim excess, and prick the base with a fork. Cover and freeze for 30 minutes.
  3. Blind bake: Preheat oven to 190°C. Fill the tart shell with baking paper and pie weights or rice. Bake for 20 minutes, then remove weights and bake for 5 more minutes. Let cool completely.

Making the Filling:

  1. Cream the butter and sugar: In a stand mixer, beat together butter and sugar until light and fluffy.
  2. Add eggs and almond butter: Beat in eggs one at a time, then stir in almond butter.
  3. Combine remaining ingredients: Mix in vanilla, almond extract, salt, and almond flour.
  4. Fill the tart: Pour filling into cooled tart shell and sprinkle with flaked almonds.

Baking the Tart:

  1. Bake: Bake at 190°C for 20-25 minutes, then cover with foil and bake for an additional 10-20 minutes (total 45-50 minutes), or until golden and set.
  2. Cool and serve: Let cool completely before slicing and dusting with icing sugar.

  • For a richer flavour, use blanched almond flour.
  • If you prefer a sweeter tart, increase the sugar in the filling by 1-2 tablespoons.
