The Viral Date Bark: A Healthy and Delicious Dessert

The viral date bark is a delicious and healthy dessert that is taking TikTok by storm. This simple recipe is made with just a few ingredients, including dates, nut butter and chocolate. The dates provide natural sweetness, the nut butter adds richness and creaminess, and the chocolate gives it a decadent flavour.

We decided to create a 'date free' version of this recipe, as many people can have problems digesting dates due to the high fructose level in them! 

We decided to use dried apricots in replacement of the dates. 

Dried apricots have a similar nutritional profile to dates, however are a lot lower in calorie and sugar. 

We decided to use our 99th Monkey Natural Almond Butter as the nut butter of choice as almond butter pairs well with both apricots and white chocolate. 

The Perfect Pairing: White Chocolate and Apricots

We also decided to change the traditional 'milk chocolate' ingredient in the viral date bark recipe and use white chocolate. White chocolate and apricots complement each other perfectly. 

White chocolate and apricots are a match made in heaven. The sweet, creamy white chocolate perfectly complements the tart, fruity apricots. This combination is found in many desserts, from cakes and cookies to pies and tarts.

To make our version of the viral 'date' bark, you will need the following ingredients.



  • Dried apricots
  • 99th Monkey Natural Almond Butter 
  • White chocolate


  1. Place the dried apricots on a lined baking tray, lay them out flat, overlaying each one a little bit 
  2. Using your hands, squish the apricots down, so they begin to stick together
  3. Add a layer of your almond butter over the top of the 'sheet' of apricots
  4. Melt your white chocolate and drizzle it over the top of the almond butter layer until the whole 'sheet' of apricots are covered 
  5. Place your tray of apricots into the freezer to set
  6. Once set, remove from the freezer and slice or tare your apricot 'bark' into pieces
