We decided to use dried apricots in replacement of the dates.

We decided to use our 99th Monkey Natural Almond Butter as the nut butter of choice as almond butter pairs well with both apricots and white chocolate.

- White chocolate
Method
- Place the dried apricots on a lined baking tray, lay them out flat, overlaying each one a little bit
- Using your hands, squish the apricots down, so they begin to stick together
- Add a layer of your almond butter over the top of the 'sheet' of apricots
- Melt your white chocolate and drizzle it over the top of the almond butter layer until the whole 'sheet' of apricots are covered
- Place your tray of apricots into the freezer to set
- Once set, remove from the freezer and slice or tare your apricot 'bark' into pieces
