Go Nuts for Christmas with this Easy Cinnamon Scroll Recipe

It’s that time of year again. Christmas trees are popping up in living rooms everywhere and Mariah Carey and Michael Bublé have made their ever-predictable return to radio. We thought we’d better hurry up and jump on the festive train! The countdown is on, and we are totally here for it. 

Say hello to our oh so soft and fluffy Nuts for Christmas Cinnamon Scrolls! If you love traditional cinnamon scrolls, then THIS is the recipe for you. It’s an OG recipe with a delightful 99th Monkey twist, because it’s the secret ingredient that makes all the difference.  

These make THE BEST breakfast. They are easy to make, and the perfect finishing touch to a big breakfast spread. So don’t pass on baking them for your friends, family and everyone that’s blessed to share Christmas day with you. They are sure to be raving about it for days!

Nuts for Christmas Cinnamon Scrolls

Serves 6

Ingredients

Scrolls

  • 3 tbsp vegan butter
  • 1 cup almond milk
  • 1 packet instant yeast
  • 1 tbsp brown sugar
  • Pinch of salt 
  • 2 ½ cups self-raising flour (plus more for dusting)

Filling 

  • 2 tbsp Nuts for Christmas spread 
  • 2 tbsp vegan butter
  • ¼ cup brown sugar
  • 1 tsp cinnamon 

Icing 

  • ½ cup icing sugar 
  • 2 tbsp non-dairy milk
  • Caramel sauce of choice 

Method

  1. Warm butter and almond milk on stove until warm, stir in the brown sugar, salt and yeast. Remove from heat and allow to sit for 20 - 30 minutes 
  2. Stir in ½ cup of flour at a time until a dough forms
  3. Transfer onto lightly dusted surface and knead until a dough ball forms. Spray bowl with oil and place dough in to rest. Cover with a tea towel and leave for an hour 
  4. Pre-heat oven to 180C and grease a baking tray 
  5. Meanwhile, make the filling by melting the butter and spread together
  6. When dough is ready, roll out into a thick rectangle, brush the melted filling over the dough and sprinkle the sugar and cinnamon mix
  7. Lightly roll the dough up into a log and cut into 6 even portions 
  8. Bake in the oven for 20 - 25 minutes until golden brown 
  9. Prepare the icing into a smooth mixture and drizzle on top.
  10. Enjoy!
