My Seriously Addictive Gooey Almond Butter Bliss Balls

Yields: Approximately 18 bliss balls (trust me, you’ll want this many!) Prep time: 15 minutes Freeze time: 20 minutes Set time: 30 minutes

Ingredients:

  • 250g pitted dates (Medjool are best for extra moisture and sweetness)
  • 20g rice malt syrup (adds a lovely subtle sweetness and helps with binding)
  • 200g 99th monkey smooth almond butter (the star of the show – don't skimp!)
  • 30g protein powder (optional, but adds a boost and a slightly firmer texture – use your favourite flavour)
  • 100g dark chocolate
  • 1 tsp coconut oil (helps the chocolate melt smoothly and creates a lovely sheen)

Instructions:

  1. The Power Blend: Grab your food processor and add the pitted dates, rice malt syrup, our glorious 99th monkey smooth almond butter, and protein powder (if using).
  2. Blend Until Blissful: Process these ingredients until the mixture comes together and forms a large, sticky ball. You might need to stop and scrape down the sides of the food processor a couple of times to ensure everything is evenly incorporated. If the mixture seems a little dry, don't be afraid to add 1-2 tablespoons of water, one at a time, until it reaches a cohesive, slightly sticky consistency.
  3. Roll into Gooey Goodness: Once the mixture has formed a ball, it’s time to roll them into individual bliss balls. I find that 30g per ball is the perfect size for a satisfying snack. Don't be alarmed if the mixture feels a little oily and soft – that’s the magic of our smooth almond butter working its gooey wonders! Place the rolled balls onto a baking tray lined with parchment paper.
  4. Chill Out Time: Pop the tray of bliss balls into the freezer for about 20 minutes. This quick freeze will help them firm up slightly, making them easier to dip in the chocolate.
  5. Melted Decadence: While the bliss balls are chilling, prepare the chocolate coating. In a heatproof bowl set over a saucepan of gently simmering water (or in short bursts in the microwave), melt the dark chocolate and coconut oil together. Stir until smooth and glossy.
  6. The Chocolate Dip: Once the bliss balls are slightly firm, take them out of the freezer. One by one, dip each bliss ball into the melted chocolate, ensuring it’s fully coated. You can use a fork or a toothpick to help with the dipping process. Allow any excess chocolate to drip off.
  7. Set the Stage for Deliciousness: Place the chocolate-coated bliss balls back onto the lined baking tray.
  8. Final Chill: Transfer the tray to the refrigerator and let the bliss balls chill for at least 30 minutes, or until the chocolate has completely set.
  9. Indulge (and Maybe Share… Maybe Not!): Once the chocolate is firm, your Gooey Almond Butter Bliss Balls are ready to be devoured! Store them in an airtight container in the refrigerator for up to a week (if they last that long) or in the freezer for longer storage. Just let them sit at room temperature for a few minutes before enjoying if frozen.

Why These Bliss Balls Have Me Hooked (and Will Hook You Too)!

These aren't just any bliss balls. They're a symphony of textures and flavours that hit all the right notes:

  • Intense Almond Butter Flavor: Thanks to the generous amount of our 99th monkey smooth almond butter, the nutty goodness shines through in every bite.
  • Unapologetically Gooey: That soft, almost molten centre is what sets these apart. It’s a textural dream!
  • Perfectly Sweetened: The dates and a touch of rice malt syrup provide natural sweetness without being overpowering.
  • Satisfying and Energising: Packed with healthy fats, fibre, and a potential protein boost, these bliss balls will keep you feeling full and energised.
  • The Dark Chocolate Finale: The crisp, slightly bitter dark chocolate coating adds a layer of decadent indulgence that perfectly complements the nutty sweetness within.

These Gooey Almond Butter Bliss Balls have become more than just a snack for me; they’re a little moment of pure joy in my day. And now, I’m thrilled to finally share this recipe with you all. I have a feeling you’re about to understand my daily obsession!
