Soba Noodle Bowl with Satay Sauce

Ingredients

  • 90g soba noodles
  • 150g tofu (or protein of choice)
  • 1 tsp. oil
  • 1 large spoon 99th Monkey Salted Peanut Butter
  • ¼ lemon
  • ¼ broccoli
  • ½ capsicum
  • 1 carrot
  • sesame seeds
  • Soy sauce
  • 1/5 tsp. garlic

Method:

  1. Bring a saucepan of water to boil and cook noodles for 5 minutes.
  2. Add 1tsp oil to a pan and cook tofu and vegetables.
  3. Combine 99th Monkey Salted Peanut Butter, lemon juice and hot water in a small bowl and then add to pan.
  4. Toss through noodles and sprinkle sesame seeds.
  5. Serve and enjoy!
