99th Monkey White Chocolate Swirl Raspberry Muffins
We have a confession to make, we have been keeping a secret from you. Say hello to our newest flavour. Our White Chocolate Spread. Here for a limited time only, trust us you don’t want to miss out on this one.
We don’t like to play favourites, but our White Chocolate Spread is oh so delicious, creamy, sweet, with a blend of cashew, macadamia nuts and cacao butter with hints of coconut sugar it takes the crown this week for us at least!
We’ve had it by the spoon, dipped, spread and mixed. We’re still feeling inspired so we’ve created the ultimate muffin. Light, fluffy with swirls of delicious drops of White Chocolate Spread and bursts of fresh raspberries. Perfect for satisfying all those cravings.
99th Monkey White Chocolate Swirl Raspberry Muffins
Ingredients
- 2 cups flour of choice (we used wholemeal)
- ½ cup raw sugar
- 1 cup almond milk
- ¼ cup coconut oil, or vegan butter melted
- 1 tsp corn starch
- 2 tsp baking powder
- Pinch of salt
- 1 tsp vanilla extract
- 1 cup frozen of fresh raspberries
- 1 jar 99th monkey White Chocolate Spread
Method
- Preheat oven to 180C
- Mix together flour, sugar, baking powder and salt
- Slowly add in almond milk, melted coconut oil, vanilla and corn starch
- Fold gently until a thick batter forms, take care not to over mix
- Mix in raspberries
- Fill muffin liners with about ¾ cup of batter
- Take a teaspoon of nut butter and top on muffin
- Bake for 25 - 30 minutes or until skewer comes out clean and muffins and lightly golden
- Top with an extra spoon of 99th monkey white chocolate spread and raspberries if desired.
