RECIPE

(Serves 8)

Ingredients

  • 1 kg chicken mince
  • 180 g 99th Monkey Crunchy Natural Almond Butter
  • 400 g zucchini (diced)
  • 400 g potato (diced)
  • 300 g carrot (diced)
  • 150 g brown onion (diced)
  • 1 tbs garlic (minced)
  • 800 ml chicken bone broth
  • 115 g tomato paste
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • Salt and pepper to taste
  • Chopped fresh coriander, for garnish (optional)

    Method

    1. Mix chicken in a large bowl with 1/2 of the spice blend
    2. In a large pot, cook chicken until browned, then remove & set aside
    3. Heat on medium: onion, garlic, remaining 1/2 of spices (optional: ginger)
    4. Pour in chicken bone broth & cooked chicken
    5. Stir in Crunchy Natural Almond Butter - simmer and reduce heat
    6. Stir occasionally for 30 mins
    7. Stir in vegetables
    8. Simmer for 30 mins (until vegetables are softened to your liking)
    9. Serve over rice and add coriander to garnish
